I’d like to order. Can you tell me what’s in this? Is the fish really raw?
Waiter
I see, let me explain. Basically, sushi is rice that has been lightly dressed in a special vinegar. The fillings and toppings are all different. So if you don’t want to try the raw fish I recommend this one here, it’s cucumber. Or this one is boiled crab.
Customer
I suppose I should give it a go… What’s that black stuff around it?
Waiter
This is nori. It’s dried seaweed with a very mild sweet taste.
Customer
I see. Well, I think I’ll have to be brave.I’ll try the mixed sushi set. I’ll try anything once!
Waiter

This is called ponzu. It’s shredded daikon radish and vinegar. You can dip your tempura in here.

Waiter
Soba is a buckwheat noodle. It’s got a mild nutty flavour. You dip these cold noodles into this dipping sauce. You can add the greenonion and wasabi if you like. Be careful! Wasabi is spicy!

Waiter
The California roll has avocado, cucumber and crab meat inside. The roll is inside out so you can’t see the nori seaweed clearly.
